Substitutions and Variations

Different breads: Brioche, sourdough, cranberry bread, pumpkin bread, and cinnamon raisin bread all make great alternatives to using banana bread.
Vegan version: Switch out the egg with 1 tablespoon of apple sauce or ground flax seed and add 1 tablespoon of cornstarch to your mixture.
Other fruit: Top with any fruit you like, such as blueberries, strawberries, raspberries, kiwis, or mandarin orange segments.
Sweetener: Use agave syrup, honey or treacle mixed with a touch of cinnamon in place of maple syrup or powdered sugar.

Chocolate chips: Add chocolate chips for extra indulgence.
Milk: Any kind of milk works here – whole milk, skim milk, almond milk – just use your favorite.

Banana bread French toast is a decadent breakfast treat that’s super-easy to make. Banana bread slices are dipped in a sweetened, spiced egg mixture and then pan-fried to golden brown perfection. I love mine with pure maple syrup or confectioners sugar and chopped nuts on top. This recipe is so much more satisfying that regular French toast but just as easy to prepare.
