Ingredients 

  • 8 eggs, large
  • ½ Teaspoon black pepper
  • 2 Tablespoons taco seasoning
  • ½ Cup sharp cheddar cheese, shredded, plus more for serving
  • 3 Cups frozen potatoes O'Brien
  • 1 Tablespoon olive oil, or butter
  • 1 Pound ground breakfast sausage

To Serve

  • ¼ Cup cilantro, freshly chopped
  • ¼ Cup pico de gallo, freshly made, or salsa

Instructions 

  • Whisk eggs, black pepper, half the taco seasoning, and the cheddar cheese in a large mixing bowl until combined. Set aside.
  • Cook the potatoes O’Brien with the remaining taco seasoning according to package instructions. Set aside in a bowl.
