Cooked rice or quinoa: To make the dish more filling. You can use either one, or some of both.

Marinate the chicken: Toss the chicken, buffalo sauce, garlic powder, salt and pepper together and refrigerate for 30 minutes to 2 hours.

- 1 Pound chicken breasts, boneless and skinless
- ¼ Cup buffalo sauce
- 1 Teaspoon garlic powder
- 1 Teaspoon salt
- ½ Teaspoon black pepper
- 1 Tablespoon olive oil
To Serve:
- 3 Cups rice, or quinoa, cooked
- 1 cucumber, small, sliced
- buffalo sauce
- ranch dressing, optional
Instructions
- Combine the buffalo sauce, garlic powder, salt, and pepper in a large mixing bowl.
- Add the chicken and make sure it’s covered all over with the marinade.
- Marinate in the refrigerator for at least 30 minutes or up to 2 hours.
- Heat the olive oil in a large skillet over a medium-high heat.
- Add the chicken to the skillet, discarding the extra marinade.
- Cook for 6 to 8 minutes on each side or until cooked through.
- Remove and let it rest for 5 minutes.
- Slice the chicken or cut it into cubes.
- Evenly divide the rice or quinoa and chicken between 4 meal prep containers.
- When ready to serve, top with sliced cucumbers, extra buffalo sauce and ranch dressing if liked.
