Ingredients 

  • 2 Pounds ground buffalo, or bison
  • 1 red onion, diced 
  • 6 Ounces gorgonzola cheese, crumbled
  • 1/2 Cup breadcrumbs
  • 1 egg
  • 1 Teaspoon salt, coarse
  • 1/2 Teaspoon black pepper, coarse
  • 1/4 Teaspoon red pepper flakes 
  • 1 Teaspoon dried garlic, granulated
  • 1 Teaspoon dill weed
  • 1 Tablespoon mustard, stone-ground

To Serve

  • 8 pretzel buns 
  • butter lettuce  

Instructions 

  • Preheat the grill or smoker to 400 degrees F for 15 minutes.  
  • Combine all burger ingredients in a large mixing bowl and mix thoroughly.  
  • Scoop out ¼ cup of meat mixture and form burger patties. 
  • Place patties directly onto the grill grates and cook for 5 minutes per side.  
  • During the final 2 minutes of cooking time place pretzel buns cut side down onto the grill grates to lightly toast 
  • Prepare burgers. Add desired toppings and serve.
