Ingredients

  • 2 Pounds ground buffalo  or bison
  • red onion diced 
  • 6 Ounces gorgonzola cheese Shredded
  • 1/2 Cup bread crumbs
  • 1 egg
  • 1/2 Teaspoon black pepper coarse
  • 1 Teaspoon salt coarse
  • 1/4 Teaspoon red pepper flakes 
  • 1 Teaspoon dried garlic  granulated
  • 1 Teaspoon dill weed
  • 1 Tablespoon mustard stone ground

For serving 

  • 8 hamburger buns  pretzel
  • Butter lettuce  

Instructions

  • Preheat the grill or smoker to 400 degrees F for 15 minutes.  
  • Combine all burger ingredients in a large mixing bowl and mix thoroughly.  
  • Scoop out ¼ cup of meat mixture and form burger patties. 
  • Place patties directly onto the grill grates and cook for five minutes per side.  
  • During the final two minutes of cooking time place pretzel buns cut side down onto the grill grates to lightly toast 
  • Prepare burgers. Add desired toppings and serve.
