Grilled Buffalo Burger Ingredients
A complete list of ingredients and amounts can be found in the recipe card below.
Ground buffalo: Flavorful meat that makes a juicy and protein-rich patty. Buffalo is leaner and slightly sweeter than beef, with a rich, meaty taste.
Red onion: Adds a sweet and sharp bite to the mix.
Gorgonzola cheese: Brings tangy richness and melts into the patty for bold flavor.
Breadcrumbs: Help bind the burgers while keeping them tender.
Egg: Acts as a binder to hold the patties together.
Red pepper flakes: Add warmth and a hint of heat.
Dried garlic and dill weed: To layer in aromatic, earthy flavor.
Stone ground mustard: Adds sharpness and complexity.
Pretzel buns: Sturdy and slightly sweet, perfect for holding up to juicy patties.
Butter lettuce: Offers a crisp, fresh contrast to the rich burger.

Preheat the grill: Bring your grill or smoker to a steady cooking temperature.
Mix the ingredients: Combine ground buffalo, cheese, spices and egg in a large bowl.
Shape the patties: Use a scoop to portion and form the meat into even burgers.
Grill the burgers: Cook each patty evenly on both sides until done.
Toast the buns: Lightly toast the pretzel buns cut side down on the grill.
Assemble and serve: Add lettuce and any toppings you like, then serve immediately.
Substitutions and Variations
Use ground beef or turkey instead of buffalo: If buffalo isn’t available, other ground meats work well.
Swap gorgonzola for blue cheese or feta: Choose a cheese with a similar tangy flavor.
Pretzel buns: You can use brioche buns instead if you prefer.
Add toppings like caramelized onions or pickles: For extra texture and flavor contrast. I like spicy dill pickles on mine!
Serving Suggestions
With fries: Regular fries, polenta fries, Louisiana voodoo fries, or even sweet potato wedges would be good with these burgers.
Other sides: Add onion rings to the plate, and perhaps a macaroni salad also.
How to Store Buffalo Burgers
Store: If you have leftover patties, you can refrigerate them and use within 3 days. The assembled burgers should be served freshly made though.
Freeze: You can store the patties in the freezer for up to 3 months, either uncooked or cooked.
Thaw: Thaw overnight in the refrigerator.
Reheat: Warm them back up on the grill or perhaps in the air fryer or a skillet on the stove.
Top Tips
Don’t overwork the meat: Mix just until combined to keep the burgers tender.
Use a meat thermometer: Ensure patties reach a safe internal temperature without overcooking.
Let burgers rest before serving: This helps keep juices inside the patties.
Buffalo Gorgonzola Burger FAQs
Use a meat thermometer for the most accurate result. 140 degrees F in the thickest part is medium while 160 degrees F would be well done. I prefer them medium or even medium-rare which would be 135 degrees F in the middle. Buffalo (or bison!) is a lean meat so it can dry out if overdone.
Although the terms are often used interchangeably they aren’t the same animal. Bison are found in North America and some parts of Europe while buffalo are native to Asia and Africa. Buffalo are bigger than bison and have longer horns. Buffalo burgers and bison burgers tasty very similar though, so use whichever meat you can find.
