Meal Prep Buffalo Chicken Bowls

A great lunch or dinner option, meal prep buffalo chicken bowls are simple to prepare and stay fresh for days in the fridge for a tasty meal in minutes.

Ingredients

To Serve:

  • 3 Cups rice or quinoa, cooked
  • 1 cucumber small, sliced
  • buffalo sauce
  • ranch dressing optional

Instructions

  • Combine the buffalo sauce, garlic powder, salt, and pepper in a large mixing bowl.
  • Add the chicken and make sure it’s covered all over with the marinade.
  • Marinate in the refrigerator for at least 30 minutes or up to 2 hours.
  • Heat the olive oil in a large skillet over a medium-high heat.
  • Add the chicken to the skillet, discarding the extra marinade.
  • Cook for 6 to 8 minutes on each side or until cooked through.
  • Remove and let it rest for 5 minutes.
  • Slice the chicken or cut it into cubes.
  • Evenly divide the rice or quinoa and chicken between 4 meal prep containers.
  • When ready to serve, top with sliced cucumbers, extra buffalo sauce and ranch dressing if liked.

Notes

Marinating time: Let the chicken marinate for a minimum of 30 minutes, but ideally up to 2 hours for a bolder flavor.
Check the chicken is done: It helps to use an instant-read meat thermometer to ensure the chicken is cooked to an internal temperature of 165°F.
Let it rest: Let the cooked chicken sit for 5 minutes before slicing to retain juices.
Crisp cucumbers: To keep the cucumbers crisp, add them fresh before serving or store sliced cucumbers in a separate container.
