Chicken tenderloin: I usually use chicken tenderloins but you can sub chicken breasts or chicken thighs if you prefer.
Breadcrumbs: For a crispy, crunchy coating. I like to use half panko breadcrumbs as well as regular breadcrumbs. You can also use all panko or all plain (or Italian seasoned).
Blue cheese: For the dressing. You can use any kind of blue cheese you want.
Hot sauce: I like Franks hot sauce but you can use sriracha or anything else you have.
Seasonings: Garlic and onion powder feature in the blue cheese dressing as well as the chicken tenders coating. Paprika is good in the hot sauce mixture.
How to Make Buffalo Chicken Tenders

Make the dressing: Make the blue cheese dressing recipe and refrigerate.
Flavor the chicken tenders: Mix the chicken, eggs, hot sauce, garlic powder, onion powder, and some salt and black pepper together.
Make the coating: Mix the panko and regular breadcrumbs with the parmesan cheese, some onion and garlic powder, salt and pepper.
Coat the chicken: Dip the tenderloins in the breadcrumb coating until fully coated.
Cook the chicken tenders: Arrange the tenderloins in a greased air fryer basket and spray with cooking spray, then cook for 6 minutes at 400 degrees F.
Make the spicy hot sauce: Stir the sauce ingredients together in a pan on the stove until the butter melts, then set aside.
Flip the chicken tenders: Flip and spray with oil and then cook for another 6 to 8 minutes on the other side or until golden brown and 165 degrees F in the middle.
The finishing touches: Toss the chicken tenders in the sauce and serve immediately.
Substitutions and Variations
Gluten-free option: If you want a gluten-free version, use gluten-free breadcrumbs (I like these).
Oven baked version: Cook them for 15 to 20 minutes in the oven at 425 degrees F or until done.
Another dressing: Not a fan of blue cheese? You can serve these with ranch dressing instead if you prefer.
Serving Suggestions
Appetizers: Pair these buffalo chicken tenders with crab cake egg rolls or chips with a red pepper cream cheese dip.

How to Store Buffalo Chicken Strips
Store: Keep leftover boneless buffalo chicken wings for up to 4 days in a covered container in the refrigerator. Keep in mind the breading will lose its crunch once they’re thawed but they still taste good.
Freeze: The remaining chicken tenders won’t freeze so well because the breading gets soggy and the chicken might dry out a bit.
Reheat: You can microwave them or warm them up in the air fryer. The breading won’t be as crunchy once cooled and reheated however.
Top Tips
Quantity: As the breading gets soggy and soft once these are thawed, it’s best to calculate exactly how many chicken tenders you need and only make that amount. Crispy chicken tenders are what we want!
Plan ahead: If you know you’ll be in a rush, you can prepare the blue cheese dressing up to 3 days ahead.
Not so saucy: Prefer your tenders a bit more dry? Give them another 3 or 4 minutes in the air fryer after tossing them with the buffalo sauce.

See the white string running along the chicken? That’s the chewy tendon and you won’t want to eat it. So to remove it, position the tendon between 2 fork tines and then holding on to the tendon with a paper towel, push away the fork while pulling on the tendon. You will find it slides out of the chicken fairly easily.
Chicken tenders are the white meat which hangs just under each chicken breast. You can buy them as they are or else sub chicken breast strips.
Your chicken tenders might not come out crispy if you overcrowd the air fryer basket or don’t let the air fryer get hot before adding the chicken tenders. Do these two things and you can expect a reward of juicy spicy chicken tenders which are crunchy on the outside and succulent inside.

Air Fryer Buffalo Chicken Tenders
Ingredients
For the Chicken Tenders:
- 1 Pound chicken tenderloins, about 8, tendon removed
- 2 eggs
- 1 Tablespoon hot sauce
- 1½ Teaspoons garlic powder
- 1½ Teaspoons onion powder
- 1½ Teaspoons coarse kosher salt
- 1½ Teaspoons black pepper
- ½ Cup panko breadcrumbs
- ¼ Cup parmesan cheese, grated
- ¼ Cup breadcrumbs, dried, Italian or plain
- nonstick cooking spray
- 2 Tablespoons fresh parsley, chopped, optional garnish
For the Sauce:
- 2/3 Cup Frank’s Red Hot Sauce
- 1 Stick unsalted butter
- 1 Tablespoon white vinegar
- ½ Teaspoon Worcestershire sauce
- ¼ Teaspoon paprika
- ¼ Teaspoon garlic powder
Instructions
- Put the chicken, eggs, hot sauce, 1 teaspoon garlic powder, 1 teaspoon onion powder, 1 teaspoon salt, and 1 teaspoon pepper in a bowl or Ziploc bag.
- Mix until the chicken is fully coated. Set aside.
- Put the panko breadcrumbs, parmesan cheese, regular breadcrumbs, ½ teaspoon onion powder, ½ teaspoon garlic powder, ½ teaspoon salt, and ½ teaspoon pepper in a bowl or Ziploc bag. Mix until combined.
- Add the chicken to the breadcrumb mixture. Make sure the tenderloins are fully coated in the breadcrumbs.
- Preheat the air fryer to 400°F and spray the bottom of the air fryer basket with oil.
- Place the tenderloins in the air fryer without overlapping and spray with nonstick cooking spray.
- Air fry for 6 minutes.
- While the chicken is cooking, make the sauce. Heat the sauce ingredients in a pan over a medium heat. Stir until everything has come together and the butter has melted. Set to one side.
- Flip the chicken over and spray with more oil.
- Cook for an additional 6 to 8 minutes or until you have an internal temperature of 165°F.
- Remove the tenderloins from the air fryer and toss with the sauce or brush it on using a pastry brush.
- Serve immediately with blue cheese dressing side for dipping.
