Why You’ll Love It
A delicious dish: Hearty breakfast staples like bacon, sausage, eggs, cheese, and veggies make this really tasty.
Easy to prepare: This really is a simple dish! You just combine your ingredients, pour the mixture into a Bundt pan and pop it in the air fryer.
Makes a tasty change: If you’re bored with your usual breakfast recipes, this one makes a delicious change.
Loaded Bagel Bake Ingredients
A complete list of ingredients and amounts can be found in the recipe card below.
Bagels: Use slightly stale bagels if you have some. They work perfectly in this recipe.
Bacon: Adds a salty, meaty flavor.
Sausage: I used breakfast links.
Spinach: Fresh spinach adds color, flavor and nutrients.
Tomatoes: I used the canned ones with green chilies but regular canned tomatoes work too.
Cheese: Colby and Gruyere add lots of cheesy flavor.
Eggs: Eggs add flavor and also help hold the dish together.
Everything bagel seasoning: A mixture of poppy seeds, sesame seeds, garlic, onion, and salt.

Layer the ingredients in a Bundt pan: Add the cooked bacon, sausage and bagels to the Bundt pan along with the tomatoes, cheese, and spinach, making 2 or 3 layers.
Add the eggs: Beat the eggs and milk then pour this into the Bundt pan. Add more bagel pieces and some butter then cover the pan with foil.
Air fry it: You can then cook this loaded bagel breakfast bake casserole in the air fryer. If you don’t have an air fryer (or don’t have one large enough to accommodate the baking pan) just use the oven.
The finishing touches: When a knife comes out clean, the bagel egg bake is done. Unmold it and sprinkle cheese and everything bagel seasoning on top. Serve hot.
Substitutions and Variations
Bacon and sausage: Ham would be good if you prefer using that to bacon, and you can use whatever kind of sausage you want as well.
Spice it up: Add a spicy touch with a pinch of cayenne pepper or chili powder. If you only have regular canned tomatoes, not the kind with chilies, this is a way of getting the heat in.
Vegetables: If you like bell peppers, you might like to add some to this easy breakfast strata. Perhaps you have some cooked already left over from last night’s dinner. Peppers add a splash of color as well as a different flavor. Sliced mushrooms would be good too.
Serving Suggestions
With breakfast or brunch: Enjoy a serving with mermaid smoothie bowls or breakfast fries, and perhaps a cozy lavender matcha latte.
For lunch or dinner: Pair the Bundt bake with roasted artichokes or Brussels sprouts.
How to Store Everything Bagel Casserole
Store: Keep leftovers in a covered container in the refrigerator for up to 3 days.
Freeze: It will freeze for up to 2 months.
Thaw: Defrost it overnight in the fridge.
Reheat: You can reheat leftovers in the air fryer, oven or microwave.
Top Tips
No Bundt pan? If you don’t have an 8-inch Bundt pan, just use a regular baking dish.
Shred you own cheese: Shredding your own cheese means it melts better. Pre-shredded cheese has starches added to stop it clumping together but this affects the flavor and how it melts.
Easy release: If you have trouble getting it out of the pan, tap the pan sides with a spatula and run it around the edges until the breakfast bake is dislodged.
Air Fryer Bagel Bake FAQs
Either buy or make keto bagels or else use low carb bread instead. A lot of grocery stores sell at least one reduced carb bread or bagel alternative.
Prepare this breakfast bake the night before, if you like. All you need to do then is pop it in the air fryer in the morning. Since the bagel egg bake will have spent all night in the refrigerator, it might need a few extra minutes in the air fryer.
To make your own everything seasoning, combine 2 tablespoons of poppy seeds with a tablespoon each of black and white sesame seeds, 1½ tablespoons each of garlic and onion flakes, and 1½ teaspoons salt flakes. This seasoning isn’t just amazing paired with stale or leftover bagels in a breakfast strata. You can also sprinkle a pinch over anything from cooked veggies to a salad. I love it over sliced avocado.

Air Fryer Breakfast Bundt Bake
Equipment
- Bundt Pan 8-Inch
Ingredients
- 5 bagels, everything flavor, cut into 1-inch cubes
- 1/2 Cup bacon, cooked and chopped
- 12 sausages, cooked, I used breakfast links
- 2 Tablespoon butter
- 1/2 Cup spinach
- 1 Cup canned tomatoes, with green chilies, drained
- 1/2 Cup Colby cheese , shredded
- 1/2 Cup Gruyere cheese, shredded
- 6 eggs
- 1/2 Cup milk
- 1 Tablespoon everything bagel seasoning
Instructions
- Preheat the air fryer to 390 degrees F.
- Cut the bagel into bite sized pieces. Cook and chop the bacon. Cut cooked sausage links into ¼-inch pieces.
- Spray an 8-inch Bundt pan with nonstick cooking spray. Layer half the ingredients into the Bundt pan starting with the bagels, then add sausage, bacon, spinach, tomatoes, and cheese. Repeat with the remaining half. Save 6 to 7 pieces of bagel for use after the next step and also save a small amount of cheese to sprinkle onto the top of the casserole after cooking.
- In a large mixing bowl, combine the eggs and milk. Whisk until smooth. Pour this into the bundt pan. Add the 6 to 7 pieces of bagel and pour melted butter over the top. Cover with foil.
- Place the bundt pan into the air fryer and cook for 20 minutes. Remove the foil, and cook for 2 more minutes. Remove the bundt pan from the air fryer and let it cool for 5 minutes.
- Place your serving plate over the top of the bundt pan. Hold the plate securely to the pan and flip it upside down and onto the plate. The casserole should slide out onto the plate. If it is stubborn, tap the sides of the bundt pan with a spatula, and gently trace along the edges to release.
- Sprinkle cheese and everything bagel seasoning over the top and cut into slices.
Notes
Shred you own cheese: Shredding your own cheese means it melts better. Pre-shredded cheese has starches added to stop it clumping together but this affects the flavor and how it melts.
Easy release: If you have trouble getting it out of the pan, tap the pan sides with a spatula and run it around the edges until the breakfast bake is dislodged.

Looks delicious, can it be made in the oven?
Yes, when I convert an air fryer recipe to make in the oven, I will increase the temperature by about 25 degrees F and add about 20% to the cooking time.
