  • Peel onions by soaking them in boiling water for 60 seconds.
  • Cool in cold water or ice bath, drain and peel.
  • Place peeled onions, mustard seed, peppercorns, red pepper flakes, and bay leaf in a 17-ounce mason jar.
  • Whisk together water, white vinegar, apple cider vinegar, sugar, and salt in a large saucepan.
  • Bring to a low boil and simmer for 5 minutes.
  • Carefully pour vinegar mixture over onions.
  • Seal with lid and store in the refrigerator for at least 24 hours.
  • Shake mixture before serving.

Notes

Use fresh pearl onions: Frozen ones tend to lose their crunch and the onions are the main ingredient in this pickled onions recipe.
Blanch first: A quick boil and ice bath makes peeling much easier and gives them time to cool.
Let them sit: A full day in the fridge helps develop the best flavor. They're even better after two or three days.
Always use clean utensils: This prevents contamination and keeps them fresh longer.
