Coconut Lentil Curry Soup in a Jar

  • Add the oil and diced onion to a medium pot and sauté until over a medium heat until tender.
  • Add the ingredients from the jar to the pot.
  • Add the vegetable broth and bring the soup to a boil. Reduce the heat to a simmer, cover with a lid and cook for 15 to 20 minutes, until lentils are tender.
  • 10 minutes into the cook time, add the chopped asparagus spears and coconut milk. Place the lid back on and cook for the remaining time.
  • Serve hot.

Notes
