Ingredients
For the Soup Mix:
- 1 Cup dried lentils
- 2 Teaspoons curry powder
- 2 Teaspoons turmeric powder
- 1 Teaspoon ground cumin
- ½ Teaspoon salt
- 2 Teaspoons dried minced garlic
To Add When Cooking:
- ½ yellow onion, diced (optional)
- 14 Ounces coconut milk
- 2 Cups vegetable broth
- 10 to 15 asparagus spears, chopped
- 1 Teaspoon avocado oil
Instructions
- Add the oil and diced onion to a medium pot and sauté until over a medium heat until tender.
- Add the ingredients from the jar to the pot.
- Add the vegetable broth and bring the soup to a boil. Reduce the heat to a simmer, cover with a lid and cook for 15 to 20 minutes, until lentils are tender.
- 10 minutes into the cook time, add the chopped asparagus spears and coconut milk. Place the lid back on and cook for the remaining time.
- Serve hot.
