Minestrone soup is a popular recipe and minestrone soup in a jar is a dry soup mix which you can cook with a few other simple ingredients to make the most delicious soup. Dried ingredients like dried pasta, sun-dried tomatoes, onion and garlic flakes, and chicken bouillon are all you need for this soup mix and then you’ll add the rest when making up the soup.
This delicious minestrone soup in a jar has ditalini pasta, vegetables, and garlic for a hearty snack or light meal. It’s so easy to make too.

Minestrone Soup Mix Ingredients
A complete list of ingredients and amounts can be found in the recipe card below.
Ditalini pasta: These tiny pasta tubes are the perfect size for soups.
Dried tomatoes: Use the dried ones not the sun-dried ones packed in liquid (I really like these!)
Minced onion and garlic: Again, you’ll need the dried kind, not fresh or the type you get packed in liquid.
Chicken bouillon cubes: To add an aromatic chicken flavor.
Tomatoes and vegetables: You add these when making the soup with the soup mix in a jar.
Chicken sausages: Optional but good if you want it meaty.

Prepare the minestrone soup in a jar mix: Add the ingredients for the jar to a jar, put the lid on and seal tightly.
Cook the minestrone soup: Put the ingredients from the jar into a pot with the crushed tomatoes, vegetables, water and (if using) sausages. Simmer for 15 to 20 minutes, then serve hot.
Substitutions and Variations
Gluten-free option: If you want a gluten-free version, use gluten-free pasta.
Vegetarian version: Swap the chicken bouillon for vegetable bouillon and don’t use chicken sausages.
Different vegetables: Use fresh vegetables if you prefer those over frozen. Anything goes! Try green beans, fresh diced tomatoes or corn.
Add some herbs: You can either add dried herbs to your mix in the jar or add them to the soup while it cooks. Fresh herbs are good too if added at the end of the cooking time.
Serving Suggestions
As an appetizer: Pair minestrone soup with mushroom focaccia or this festive focaccia.
As a snack: Enjoy minestrone soup with homemade rosemary crackers.
As a main meal: This flavorful soup would be delicious served with a contrasting dish, perhaps Italian style steak, eggplant lasagna or some arancini.
Drink pairing: Italian cream soda is always good.
How to Store Dry Minestrone Soup Mix
Store: Your soup mix will keep for a long time if you have the jar tightly closed and keep it in a dark, dry place, like a pantry. Over time, some of the flavors will mute a bit but it’ll stay usable for a year – or more!
Top Tips
Label the jar: It’s important to label the jar with the soup mix ingredients and instructions to make the soup at a later date.
Increase shelf life: Add an oxygen absorber (you can get those here) to the minestrone soup mix in the jar to extend its shelf life. Oxygen absorbers are those little packages that say “do not eat” on them, and they work by absorbing moisture and oxygen, helping prevent mold and spoilage.
Get everything you need: Before you begin, make sure you have printable labels, a pint-size wide mouth mason jar and some butcher’s twine.
Gift-giving: These make cute gifts! So, make some extra for friends and family who enjoy cooking.
Dry Minestrone Soup Mix FAQs
You can include anything you want as long as it’s dried or freeze-dried. Don’t add anything with moisture because it will spoil in a couple of days. So, anything fresh you want in your minestrone soup shouldn’t be added until you’re cooking it. I sometimes add dried split peas.
You can use tubettini or tubetti which are the same size and roughly the same shape as ditalini pasta. If you can’t find those, try acini di pepe or orzo which are also small shapes.
