Coffee Cookies

These coffee cookies have cinnamon and coffee flavors. They're light, fluffy and sweet, as well as being very simple to make, even if you don't bake much.

  • Preheat the oven to 350°F.
  • Line a baking sheet with parchment paper. Set aside.
  • In a mixing bowl, whisk flour, baking soda, salt, and cinnamon. Set aside.
  • In a separate bowl, cream the butter, sugar, and brown sugar.
  • Add the egg and mix until integrated.
  • Add half of the dry mixture. Mix until the flour is almost incorporated.
  • Add the coffee, and mix well.
  • Add the remaining of the flour mixture. Mix well.
  • Refrigerate the dough for 15 to 20 minutes (optional but recommended).
  • Scoop the dough into balls, using a medium-sized cookie scoop.
  • Bake in the preheated oven for 9 to 11 minutes. The edges will be set and golden and the middle will be soft.
  • Allow the cookies to cool on the cookie sheet for 2 to 3 minutes then transfer to a cooling rack to cool completely before serving.

Notes

Use a hand mixer: Using a hand mixer to mix the butter and sugar gets more air into the mixture, which results in a lighter and fluffier cookie. You can also use a Danish dough whisk if you have one.
Don't overmix: Mix only until the flour is incorporated. Further mixing beyond that point might make the cookies dense.
No overcrowding: Don't overcrowd the cookie sheet. You should have 6 to 8 cookies per batch so they bake evenly.
