This recipe makes about 18 cookies, so feel free to double up if you think they’ll disappear alarmingly fast (they usually do!)

Strong coffee: Coffee is one of the main flavors in these coffee cookies. For a less bold flavor, use weaker brewed coffee. For a rich coffee flavor, use strong coffee.
Ground cinnamon: The earthy, warm flavor of cinnamon is so good in these cookies.
All-purpose flour: One of the main ingredients (yes, you can sub gluten-free flour).
Baking soda: To achieve a light airiness.
Sugar: Use both light brown sugar and white sugar (granulated sugar) for sweetness. You can use dark brown sugar in place of the light brown sugar if you want.
Egg: To bind the cookie dough together.
Salt: A pinch of flaky sea salt or kosher salt makes the sweet flavors pop.

How to Make Chewy Coffee Cookies

Make the cookie dough: Whisk the flour with the baking soda, salt, and cinnamon in one bowl and the butter and sugar in a second. Add the egg to the butter mixture and then add half the dry mixture, the coffee, and the remaining dry mixture.
Chill the dough: Refrigerate the dough for 15 to 20 minutes (optional but a good idea).
Shape and bake the cookies: Scoop dough balls using a cookie scoop and arrange on a parchment paper lined baking sheet. Bake for about 10 minutes or until the edges are golden brown.
Cool and serve: Cook the cookies on the cookie sheet for a few minutes and then place them on a cooling rack to cool completely.

Substitutions and Variations

Gluten-free option: If you want a gluten-free version, use gluten-free flour (this is my favorite!)
Coffee: Swap the strong coffee for espresso (espresso powder mixed with boiling water) or diluted instant coffee powder.
Another spice: Swap the ground cinnamon for ground cloves, nutmeg or allspice.
Add an extract: Vanilla extract or almond extract would be good in these coffee cookies.
Glaze them: Top the cookies with a vanilla, caramel or coffee glaze.
A subtler coffee flavor: Increase the cinnamon to ½ teaspoon to make the coffee taste more subtle.
Espresso chocolate chip cookies: Add chopped chocolate chunks (dark chocolate is good) to make chocolate chip coffee cookies. You could also try white chocolate chips.

How to Store Cinnamon Coffee Cookies

Store: Keep the cookies in an airtight container at room temperature. They should stay fresh for up to 5 days.
Freeze: You can freeze the uncooked dough balls in Ziploc bags or freezer-safe containers for a few weeks.
Thaw:
 Defrost the uncooked dough balls in the refrigerator overnight and proceed with the recipe.

Can I make the cookie dough ahead of time?

Yes. You can refrigerate it for up to 24 hours or you can freeze it for several weeks before thawing and proceeding with the recipe.

Is it necessary to chill the cookie dough before making cookie dough balls and baking them?

You don’t have to but I would recommend it. That way, the cookies are less likely to spread out too much during baking. They only need about 15 minutes in the fridge.

Can I serve these warm from the oven?

They are quite fragile until they’ve cooled completely, but you can try one while it’s still warm if you simply can’t resist!

Coffee Cookies

These coffee cookies have cinnamon and coffee flavors. They’re light, fluffy and sweet, as well as being very simple to make, even if you don’t bake much.
Prep Time: 15 minutes
Cook Time: 10 minutes
Chilling Time: 15 minutes
Total Time: 40 minutes

Ingredients 

Instructions 

  • Preheat the oven to 350°F.
  • Line a baking sheet with parchment paper. Set aside.
  • In a mixing bowl, whisk flour, baking soda, salt, and cinnamon. Set aside.
  • In a separate bowl, cream the butter, sugar, and brown sugar.
  • Add the egg and mix until integrated.
  • Add half of the dry mixture. Mix until the flour is almost incorporated.
  • Add the coffee, and mix well.
  • Add the remaining of the flour mixture. Mix well.
  • Refrigerate the dough for 15 to 20 minutes (optional but recommended).
  • Scoop the dough into balls, using a medium-sized cookie scoop.
  • Bake in the preheated oven for 9 to 11 minutes. The edges will be set and golden and the middle will be soft.
  • Allow the cookies to cool on the cookie sheet for 2 to 3 minutes then transfer to a cooling rack to cool completely before serving.
