Equipment

Ingredients

For the Green Jello

  • 2 Cups water boiling
  • 1 Box lime Jello 3 Ounces/85 gram, lime-flavored
  • 1 Box lemon Jello 3 Ounces/85 gram, lemon-flavored
  • 1 Cup water cold
  • 1 Cup lime vodka chilled, I used Smirnoff Lime

For the White Jello

Instructions

Make the Green Jello

  • In a heat proof container, add both lime and lemon-flavored gelatin to boiling water. Whisk until dissolved. Stir in cold water and lime vodka.
  • Pour into an 8 or 9-inch square baking pan. Refrigerate for 4 hours or until completely set.
  • After the gelatin has set-up, remove it from the refrigerator. Using a knife, score gelatin so that it forms small squares. Mix the cubes with a fork or a spoon. Don’t worry about being gentle. A little breakage is a good thing so the pieces are not so uniform. Refrigerate until ready to use.

Make the White Jello

  • In a heat proof container, sprinkle unflavored gelatin over the top of the cold water.
  • Allow gelatin to bloom for 3 minutes, or until entirely soaked through. You’ll know it has completely soaked through when the gelatin becomes clear and is no longer white.
  • After gelatin has bloomed, whisk in boiling water. Stir until all gelatin has dissolved. Stir in lime vodka and sweetened condensed milk. Set aside.

Assemble the Syringe Shots

  • Remove the nozzle cap and the plunger of a 2-ounce shot syringe. With the nozzle end pointing downward, plug the nozzle with your finger (or reattach nozzle cap) and fill the syringe with the cubed lime gelatin about two-thirds full.
  • Carefully flip the syringe nozzle-end-up so that the jello slides down and away from the nozzle and re-insert plunger (if you reattached the nozzle cap to fill the syringe earlier, you’ll need to take it off now).
  • Once gravity has done its job and the jello is completely clear of the nozzle, squeeze out all of the air until the lime gelatin reaches the nozzle tip.
  • Fill the remainder of the syringe by using it to suck up the liquid white gelatin until the plunger reaches the end of the tube. Replace the cap and shake the contents of the syringe, this will further distribute the white area.
  • Stand syringes in a pot or a vase, nozzle-up. Refrigerate for 2 hours or until set.

Notes

Let the gelatin bloom properly: Don’t skip this or your white layer may be grainy.
Cut cubes loosely: Irregular chunks look more like “ectoplasm” than perfect squares.
Use chilled vodka: This helps the gelatin set faster and improves texture.
Tap out air bubbles: Before topping with the white layer, gently tap syringes to release trapped air.
