Eggnog Tres Leches Cake

Ingredients

For the Cake:

  • 1 Box cake mix spice cake or vanilla
  • Ingredients for cake mix listed on the box
  • Cups eggnog
  • 13 Ounces sweetened condensed milk
  • 14 Ounces evaporated milk
  • 1 or 2 Tablespoons rum optional

For the Topping:

  • 8 Ounces Cool Whip
  • 2 Tablespoons rum optional
  • 3 Tablespoons powdered sugar
  • Cinnamon or sprinkles for decoration

Instructions

  • Preheat the oven to 350°F and spray a 9 x 13-inch pan with cooking spray.
  • Make and bake the cake mix according to the package directions.
  • While the cake is baking combine the eggnog, sweetened condensed milk, evaporated milk, and rum.
  • When the cake has baked, remove from the oven and poke holes all over the cake.
  • Pour the eggnog mix over the cake. Allow to cool.
  • Beat the Cool Whip, rum and powdered sugar together until well combined.
  • Spread over the cooled cake and decorate with sprinkles or a sprinkle of cinnamon.

Notes

Wooden spoon trick: Use the end of a wooden handle spoon, a chopstick or something similar to poke holes in the cake. This helps the sauce saturate the cake and achieve an evenly moist result.
Chilled mixing bowl: I like to whip my topping in a chilled bowl to get it to beat up quicker.
Use warm milky mix to soak in: Pour the milky mixture over the cake while it is warm for best results.
Let flavors meld: Let the cake to sit for a few hours or overnight after adding the eggnog mixture to let the flavors meld together for the best taste.
Don’t over-pour: Pour the eggnog mixture slowly and in stages, giving the cake time to absorb the liquid without becoming too soggy.
