Prepare the Bananas:

  • Peel the bananas and cut each one in half.
  • Insert a skewer or popsicle stick into the flat end of each banana piece.
  • Arrange the banana halves on a baking sheet or plate so they lie flat, keeping enough space between them.
  • Place them in the freezer for about 1 to 2 hours or until firm.

Melt the Chocolate Chips:

  • Bring a small amount of water to a gentle simmer in a small pot.
  • Set a heat-safe bowl over the pot, making sure the bowl does not touch the water.
  • Add the chocolate and coconut oil, stirring occasionally until everything is melted and smooth.
  • Transfer the melted chocolate into a tall, narrow glass or jar.

Dip the Bananas:

  • Take the frozen banana halves out of the freezer.
  • Hold a banana by the skewer and dip it into the melted chocolate, turning and gently tapping off any excess.

Add Toppings:

  • Working quickly, sprinkle or roll them onto the chocolate-coated banana with your desired toppings.
  • The frozen banana will cause the chocolate to set quickly so be sure to sprinkle toppings immediately.
  • Space out the dipped bananas on a parchment-lined sheet.

Freeze Until Set:

  • Put them back in the freezer for another 30 minutes or until the chocolate is fully set.
  • Serve the frozen chocolate bananas straight from the freezer for the best texture.

Notes

Choosing the best bananas: Use ripe but firm bananas for the best balance of sweetness and firmness. Overly ripe bananas will be too soft and too-hard ones aren't so tasty.
Thin the chocolate: If your melted chocolate seems too thick for dipping, stir in a little extra coconut oil (½ teaspoon at a time) to thin it out.
Work fast: Have your toppings ready to sprinkle immediately after dipping each banana. Once the chocolate sets on the frozen banana, it's harder to get toppings to stick.
