Grilled Chicken with Pineapple Salsa

Juicy chicken breasts are paired with a homemade fresh pineapple salsa that boasts sweet, spicy and savory flavors. This colorful 30-minute dish is really easy to make.

Ingredients

For the Pineapple Salsa:

  • Cups pineapple fresh, chopped
  • 4 roma tomatoes seeds removed and diced
  • 1 jalapeno pepper seeds removed and finely diced
  • 1 red onion small, diced
  • 2 Cloves garlic minced
  • ¼ Cup cilantro chopped
  • 2 Tablespoons lime juice juice from 1 lime

To Serve:

  • 4 Portions rice cooked
  • 8 radishes sliced
  • 1 avocado peeled and sliced

Instructions

  • Pat dry the chicken with a paper towel. Drizzle 1 tablespoon of olive oil over the chicken and season both sides with taco seasoning, ½ teaspoon salt, and ½ teaspoon pepper.
  • Heat a grill pan over a medium-high heat and brush with the remaining tablespoon of olive oil.
  • Add the chicken and grill for 6 to 8 minutes on one side. Flip and continue cooking for another 6 to 8 minutes, or until the internal temperature reaches 165°F. Remove from the grill and let it rest for 5 minutes.
  • Combine the pineapple, tomatoes, jalapenos, red onion, garlic, cilantro, lime juice, remaining ½ teaspoon salt, and ½ teaspoon pepper in a medium mixing bowl. Cover and refrigerate until you’re ready to serve.
  • Dice the chicken and serve over rice, garnished with radishes, avocado slices, and a generous portion of the pineapple salsa.

Notes

A versatile salsa: If you aren't in the mood for chicken, this salsa is also great with salmon, cod or even steak. It keeps for a week so you can make extra.
Fresh is best: Although packaged pre-sliced or canned pineapple will work in a pinch, it's best to use fresh if possible. The same applies to the lime juice.
Adjust the seasoning: The amount of salt and pepper you add to the chicken depends on your brand of taco seasoning. Taste a little of the taco seasoning first to gauge its flavor.
