Grilled Chicken with Pineapple Salsa
Ingredients
- 1 Pound chicken Breasts, boneless and skinless
- 2 Tablespoons olive oil
- 1 Tablespoon taco seasoning
- 1 Teaspoon salt, or to taste
- 1 Teaspoon black pepper, or to taste
For the Pineapple Salsa:
- 2½ Cups pineapple, fresh, chopped
- 4 roma tomatoes, seeds removed and diced
- 1 jalapeno pepper, seeds removed and finely diced
- 1 red onion, small, diced
- 2 Cloves garlic, minced
- ¼ Cup cilantro, chopped
- 2 Tablespoons lime juice, juice from 1 lime
To Serve:
- 4 Portions rice, cooked
- 8 radishes, sliced
- 1 avocado, peeled and sliced
Instructions
- Pat dry the chicken with a paper towel. Drizzle 1 tablespoon of olive oil over the chicken and season both sides with taco seasoning, ½ teaspoon salt, and ½ teaspoon pepper.
- Heat a grill pan over a medium-high heat and brush with the remaining tablespoon of olive oil.
- Add the chicken and grill for 6 to 8 minutes on one side. Flip and continue cooking for another 6 to 8 minutes, or until the internal temperature reaches 165°F. Remove from the grill and let it rest for 5 minutes.
- Combine the pineapple, tomatoes, jalapenos, red onion, garlic, cilantro, lime juice, remaining ½ teaspoon salt, and ½ teaspoon pepper in a medium mixing bowl. Cover and refrigerate until you’re ready to serve.
- Dice the chicken and serve over rice, garnished with radishes, avocado slices, and a generous portion of the pineapple salsa.
