Jalapenos: I find 5 medium jalapenos work well in this jalapeno dip, but you can increase or decrease the amount as you wish.
Cheese: This dip has 2 kinds of shredded cheese as well as cream cheese. You can try different kinds of cheese if you want.
Bacon: For a meaty flavor that pairs so well with the dip. Omit it for a vegetarian version.
Green onions: Keep the white and green parts separate, as the white part goes into the dip and the green part makes a great garnish.
Garlic: You can use garlic powder if you’re out of fresh.

How to Make Jalapeno Popper Dip in a Crockpot

Cook the jalapenos: Cook the garlic, jalapenos and green onions (white part only) in a skillet for a few minutes.
Add everything to the Crockpot: Grease a slow cooker with cooking spray and add the shredded cheese, cream cheese, sour cream, salt, pepper, jalapeno mixture, and half the bacon. You will want to use a 2-3 quart Crockpot for this recipe (here).
Cook the jalapeño popper dip: Cover and cook for 2 hours on low, stirring every half hour and scraping any stuck-on bits up from the bottom of the Crockpot.
The finishing touches: Sprinkle the remaining bacon, green parts of the green onion and a little more shredded cheese (if liked) on top before serving the warm dip with fresh veggies, tortilla chips or your preferred dippers.

Slow Cooker Jalapeno Popper Dip

Ingredients 

  • 1 Tablespoon extra-virgin olive oil
  • 5 jalapeno peppers, fresh, seeded and diced with seeds and membranes removed
  • 2 green onions, sliced, white and green parts
  • 2 Cloves garlic, minced
  • 16 Ounces cream cheese, cut into cubes
  • 1 Cup cheddar cheese, shredded
  • 1 Cup monterey jack cheese, shredded
  • 1 Cup sour cream
  • 1 Cup bacon, cooked and crumbled
  • ½ Teaspoon salt
  • ¼ Teaspoon ground black pepper

Instructions 

  • Sauté the jalapenos, white parts of the green onion and garlic cloves in a skillet for 2 to 3 minutes or until tender. Set aside.
  • Use nonstick spray to coat the inside of a 2 or 3 quart slow cooker.
  • Add the cream cheese, cheddar cheese, monterey jack cheese, sour cream, ½ cup bacon, salt, pepper, and the jalapeno mixture to the slow cooker.
  • Cover and cook on low for 2 hours, stirring every 30 minutes. Be sure to scrape the bottom of the slow cooker as you stir. After 2 hours, everything should be melted, smooth and ready to serve.
  • Top with the green parts of the green onions, remaining bacon crumble and extra shredded cheese if desired, and serve with your favorite dippers.
