Instructions

  • Preheat the oven to 375 degrees F.
  • Roll the pie crusts out on a floured surface if they are not already rolled out.
  • Use the cookie cutter to cut out as many shapes as you can from the pie crusts. You need to make an even number of shapes as you’re making both tops and bottoms.
  • Arrange half of the cutout shapes on a parchment paper-lined baking sheet.
  • Spoon a little jam in the center of each one, leaving a border around the edges.
  • Add the remaining shapes on top of the jam-covered ones and press together the edges using fork to seal them.
  • Brush the hand pies with the beaten egg so they’ll have a golden finish.
  • Bake for 10 minutes or until they are golden brown.
  • Remove the pies from the oven and cool on a wire rack.
  • Microwave the marshmallows in a bowl in 15 or 20 second intervals, stirring between each one until smooth and completely melted.
  • Let the melted marshmallows cool slightly so they’re thick enough to drizzle over the pies without running too much.
  • Using a spoon or a small-tipped piping bag, drizzle the marshmallows over the cooled pies to make a wrapped mummy effect. If you like, also add small dots of melted chocolate or use little candy pieces to make mummy eyes.
  • Dust the finished mummy pies with powdered sugar if liked or decorate them with edible eyes (both optional).

Notes

Marshmallow drizzle consistency: Let the melted marshmallows cool a bit before drizzling. You need them thick but still pourable. If they're too liquidy give them a little while longer to cool and they'll thicken.
Let them cool completely: Don't add the marshmallow drizzle until the pies are cool, otherwise the heat from the pies will make the marshmallow drizzle melt and look messier.
Make plenty: Double or triple the recipe to make a batch, because leftover mummy hand pies will definitely get eaten (and they freeze well!)
