Servings: 12
- 4 Heirloom tomatoes
- 1 Burrata cheese (or buffalo mozzarella)
- 1/4 Cup basil leaves or more if desired
- 1 Teaspoon sea salt flakes
- 2 Tablespoons olive oil extra virgin
- 1 Teaspoon black pepper
- 1 Cup balsamic vinegar
- 1 Teaspoon truffle salt
Prepare balsamic glaze. Combine truffle salt and balsamic vinegar in a saucepan over medium heat and bring to a boil.
Cook until reduced to half (about 10 minutes).
Slice the tomatoes thin and drizzle with olive oil. Season with salt flakes and pepper.
Arrange tomato slices on a plate in a shingle pattern with a basil leaf between each slice.
Place the burrata (or mozzarella) in the center of the plate. Use a knife to slice the cheese open in a checkered pattern.
Drizzle the tomatoes and burrata with balsamic glaze. Season with a pinch of salt and pepper.
Garnish with chopped basil and serve right away.
- This is tasty served with sesame bread or your favorite kind of bread (don't serve bread with this if you're going to serve a big main dish after!)
- Burrata is delicious but buffalo mozzarella is the authentic Caprese choice.
