Instructions

  • Melt ⅓ cup of chocolate chips in the microwave for 30 seconds at a time, stirring after each interval, until it's completely melted.
  • Combine the melted chocolate and marshmallow fluff in a large mixing bowl. Fold the ingredients together until smooth.
  • Line an 8-inch square baking dish with wax paper and then spread the marshmallow mixture out in the pan.
  • Freeze for 6 hours, or until the marshmallow mixture is firm to the touch.
  • Before you remove the marshmallow mixture from the fridge, melt the remaining chocolate in the microwave, following the same method as before.
  • Working quickly, remove the sheet of chocolate marshmallow fluff from the pan and cut it into 12 pieces. Drop each piece in the melted chocolate and use a fork to turn it, completely covering it in chocolate.
  • Remove the marshmallow bite from the chocolate and return to a baking sheet lined with a fresh piece of wax or parchment paper.
  • Let your candy bites chill in the fridge for an hour, or until the chocolate is completely set.

Notes

Use a silicone spatula: This is the best utensil to fold the marshmallow fluff and melted chocolate together, if you have one. You want to minimize how much marshmallow fluff sticks to the utensil you’re using to stir the ingredients.
Keeping their shape: Your bites will lose shape a little bit as they chill, but chilling them in the freezer will help minimize that. After the chocolate has set you can store your bites in the fridge or freezer to hold their shape and prevent melting.
Work fast! You’ll want to work quickly once you remove the marshmallow mixture from the freezer. The mixture won't stay firm for very long. If your marshmallow pieces get too soft to work with, immediately return them for the freezer for 30 minutes before continuing. You can always re-melt chocolate in the microwave for 30 seconds if it starts to set in the bowl.
