Instructions

  • Combine the crunchy peanut butter, creamy peanut butter, sugar, and honey in a small pot on the stove over medium heat.
  • Continually stir the ingredients together until smooth and homogenous. Once the ingredients are combined, immediately turn off the heat.
  • Add the corn flakes. Stir the cornflakes into the peanut butter mixture, smashing them as you do so. Once the cornflakes are evenly distributed, transfer the mixture to a bowl and chill in the fridge for 30 minutes.
  • Divide the mixture into 12 evenly sized balls. Place each ball on a 9x13 inch baking sheet lined with parchment or wax paper. Chill the balls for another 30 minutes in the fridge.
  • Melt your chocolate chips in the microwave on 30 second intervals, stirring after each interval.
  • Dip each Butterfinger ball in the melted chocolate and then return them to the baking sheet.
  • Chill your Butterfinger balls in the fridge for about an hour, or until the chocolate is completely set.

Notes

Don't overheat the peanut butter: It should only be on the burner until the sugar is completely dissolved and the mixture is completely smooth. Take it off the heat as soon as it's done.
Break up the corn flakes: The corn flakes help give your Butterfinger bites their wonderfully crunchy texture. It's important to break the cereal up as you mix it into the peanut butter. If not, you'll end up with big clumps of corn flakes.
Butterfinger bites size: Your Butterfinger bites will be about 2 tablespoons in size, for reference when dividing the filling.
