Homemade Snickers Bites

These mouthwatering homemade Snickers bites are a tasty trio of marshmallow, peanuts and caramel, all enclosed in a chocolate layer.

Instructions

  • Melt ⅓ cup of chocolate chips in the microwave for 30 seconds at a time, stirring after each interval, until completely melted.
  • Combine the melted chocolate and marshmallow fluff in a large mixing bowl. Fold the ingredients together until smooth.
  • Drop spoonfuls of the marshmallow mixture onto a pair of 9 x 13-inch baking sheets lined with parchment paper and then top them with a spoonful of crushed peanuts
  • Chill the pans in the freezer for about 2 hours, or until the marshmallow mixture is firm to the touch.
  • Use your hands to shape the caramels into disks about the same shape as your marshmallow disks.
  • Gently press the caramels onto the marshmallow and chill for another 30 minutes.
  • Melt the remaining chocolate just like you did before and then dip each disk in the melted chocolate. Allow the excess chocolate to drip off and return them to the baking sheets.
  • Chill your Snickers bites in the fridge for about an hour, or until the chocolate is set.

Notes

Chill until firm: It's important to chill the marshmallow mixture until firm to the touch.
Work quickly: You need to work quickly when dipping your candy bites. The marshmallow fluff will start to soften as soon as it's out of the freezer. If they get soft enough that they stretch out when pulled up from the wax paper, put them back in the freezer for 15 minutes and then continue dipping.
Watch your teeth! Although these are great served frozen, the caramel will set really hard so be careful if biting into a frozen one.
