Marshmallow fluff: For the nougat layer. The recipe calls for 7 ounces so just get a 7-ounce jar.
Chocolate chips: Some for the filling and the rest for coating the candy bites.
Chopped peanuts: For crunch and flavor. I used salted peanuts. You can use those or unsalted peanuts if you prefer (I like the sweet/salty combo!)
Chewy caramels: I love to use Werthers Originals in this recipe (you can grab some online!)

How to Make Snickers Candy Bar Bites

Melt the chocolate: Melt some of the chocolate chips in a microwave.
Add the marshmallow fluff: Mix the marshmallow fluff into the melted chocolate chips until smooth.
Make the candies: Drop spoonfuls of the marshmallow mixture on to parchment paper lined baking sheets.
Let them set: Top the marshmallow bites with chopped peanuts and freeze for 2 hours or until set.
Add the caramel layer: Shape your caramels into disk-shapes (the same size as your marshmallows) and press on top. Chill for 30 minutes more.
Coat them in chocolate: Melt the remaining chocolate and dip the marshmallow caramel disks in there to coat, letting excess chocolate drip off. Chill for an hour or until set.

Substitutions and Variations

Extra nutty: If you’d like, you can top your candy bites with extra crushed peanuts. Make sure you do this right after you dip them in the chocolate so the crushed peanuts stick to the candy.
Chocolate chips: Feel free to switch out the semi-sweet chocolate chips for your favorite kind of chips. You might need a little extra freezing time if you’re using milk chocolate chips. Combine chocolate chips with some coconut oil if you want to make tempered chocolate (it’s a bit smoother that way but I just used the melted chocolate chips without adding oil and mine came out great).
Add a peanut layer: If you have extra time on your hands, you can dip your candy bites once in peanut butter baking chips, let them set, and then dip them again in melted chocolate. This will give your candy bites some extra crunch and peanut butter texture.
Another flavor: A few drops of vanilla extract would be good in these or you could add a little flaky sea salt if your peanuts are unsalted.

Freeze: You can freeze these in an airtight container for up to 2 months.
Thaw:
 Defrost it in the refrigerator overnight or on the counter for an hour or so.

Chill until firm: It’s important to chill the marshmallow mixture until firm to the touch.
Work quickly: You need to work quickly when dipping your candy bites. The marshmallow fluff will start to soften as soon as it’s out of the freezer. If they get soft enough that they stretch out when pulled up from the wax paper, put them back in the freezer for 15 minutes and then continue dipping.
Watch your teeth! Although these are great served frozen, the caramel will set really hard so be careful if biting into a frozen one.

Can I make these without peanuts?

Sure, substitute chopped almonds or hazelnuts instead of using salted peanuts. They won’t taste as much like Snickers bars or Reese’s peanut butter cups but they’ll still be nutty and delicious.

How many baking sheets do I need?

The recipe makes 16 homemade Snickers bars. They spread a little before freezing so it’s best to use 2 baking sheets with 8 Snickers bar bites on each one (to allow spreading room).

Homemade Snickers Bites

These mouthwatering homemade Snickers bites are a tasty trio of marshmallow, peanuts and caramel, all enclosed in a chocolate layer.

Ingredients 

Instructions 

  • Melt ⅓ cup of chocolate chips in the microwave for 30 seconds at a time, stirring after each interval, until completely melted.
  • Combine the melted chocolate and marshmallow fluff in a large mixing bowl. Fold the ingredients together until smooth.
  • Drop spoonfuls of the marshmallow mixture onto a pair of 9 x 13-inch baking sheets lined with parchment paper and then top them with a spoonful of crushed peanuts
  • Chill the pans in the freezer for about 2 hours, or until the marshmallow mixture is firm to the touch.
  • Use your hands to shape the caramels into disks about the same shape as your marshmallow disks.
  • Gently press the caramels onto the marshmallow and chill for another 30 minutes.
  • Melt the remaining chocolate just like you did before and then dip each disk in the melted chocolate. Allow the excess chocolate to drip off and return them to the baking sheets.
  • Chill your Snickers bites in the fridge for about an hour, or until the chocolate is set.
