They’re a mini version of full-size Twix and taste just like them. Instead of cutting Twix bars into pieces, make these easy Twix bites which combine soft caramels and Nilla wafers and are coated in chocolate. I’ll warn you now – it’s very hard to only eat one of these!

Nilla wafers: These vanilla wafers are perfect for the cookie layer. The recipe calls for regular ones but you could use mini Nilla wafers. If using mini ones, you’ll get more Twix bites!
Soft caramels: I used Werther’s Original soft caramels which are soft enough to shape without having to heat them.
Semisweet chocolate chips: I used semisweet, but you can use another type of chocolate if you prefer.

How to Make 3-Ingredient Twix Bites

Top the Nilla cookies: Gently press a flattened out soft caramel on top of every Nilla wafer and arrange them on a parchment paper lined sheet pan.
Melt the chocolate chips: Put them in a microwave-safe bowl and melt in the microwave.
Dip the Twix bites: Using a fork, dip each caramel topped wafer in the melted chocolate. Let the chocolate cover completely the wafer and caramel.
Chill them to set: Let them cool completely and put them in the refrigerator for an hour or until the chocolate sets.

Substitutions and Variations

Chocolate: Use dark chocolate or milk chocolate in place of semisweet chocolate. You could even use white chocolate if you love it.
Caramels: Use homemade caramels if you have a recipe you like, or any soft caramels brand.

How to Store Twix Bites

Store: Keep Twix bites in an airtight container or Ziploc bag in the refrigerator for up to 2 weeks.
Freeze: You can freeze them for up to 3 months.
Thaw:
 You can serve these frozen or defrost on the counter for a couple of hours (or the refrigerator overnight).

Top Tips

The right caramels: Make sure you grab the soft caramels and not the hard ones. They should be rectangular shaped.
Flattening the caramels: The caramels should be soft enough to work with straight from the package, but if you are having a hard time flattening them, heat them in the microwave briefly or in a 250°F oven. Don’t go any hotter than that though – you don’t want the caramel too hot to work with.
Let excess chocolate drip off: Let the excess chocolate drip off the Twix bites before putting them on the sheet pan so they look tidier.
Stop them sticking: Don’t skip the parchment paper or wax paper. If you don’t line your baking sheet, then the Twix bites will be much harder to remove and they might break.

Can I speed up the chilling time?

You can chill them in the freezer instead of the fridge for half an hour. This will make the caramel harden so keep that in mind when biting into frozen Twix bites.

Are these safe to eat if the chocolate goes a lighter color or has white patches?

Your chocolate might begin to change color a little bit over time. This is nothing to worry about. It is just the chocolate oxidizing, much like an apple browns. You can still enjoy your Twix bites if this happens – they’ll taste the same.

Should I use wax paper or parchment paper?

Use whichever you have. They both work!

Do you have to add coconut oil to the chocolate chips to melt them?

You can if you want (this “tempers” the chocolate) but it isn’t required.

Should I use regular or mini Nilla wafers?

You can use mini ones if you want smaller Twix bites. I used regular size Nilla wafers for this recipe.

Homemade Twix Bites

Ingredients

  • Line a 9 x 13-inch rimmed pan with parchment paper. Remove the caramels from the wrappers and use your fingers to flatten them out. Top each Nilla wafer with a caramel and arrange them on the prepared pan.
  • Melt the chocolate chips in a bowl in the microwave. Heat the chocolate for 30 seconds at a time, stirring after each interval, until the chocolate has melted completely.
  • Once the chocolate is melted and smooth, use a fork to dip each Twix bite in the chocolate and then return them to the pan.
  • Let your Twix bites chill in the fridge for an hour, or until the chocolate is set.
