Irish Nachos

Savor a tasty twist on a classic snack with loaded cheesy Irish nachos. Perfect for game day, St Patrick's Day or "just because", nachos are always good!

Ingredients

  • 3 Tablespoons olive oil
  • 8 to 10 Slices bacon chopped and cooked
  • 1 ½ Teaspoons salt
  • 3 Pounds gold potatoes scrubbed and sliced ¼-inch thick
  • 1 ½ Cups colby jack cheese shredded
  • 1 jalapeno sliced
  • 1 Teaspoon black pepper
  • ½ Teaspoon dried rosemary
  • 1 Teaspoon garlic powder
  • ½ Teaspoon dried thyme
  • 1 Cup guacamole
  • 1 Cup sour cream
  • 1 Cup pico de gallo

Optional Garnishes:

  • cilantro chopped
  • green onions sliced

Instructions

  • Preheat the oven to 450°F and grease a large rimmed baking sheet or cast iron skillet.
  • Add the potatoes, oil, salt, pepper, rosemary, thyme, and garlic to a mixing bowl.
  • Toss until the potato slices are all coated.
  • Add the potatoes to your prepared baking sheet in a single layer and bake for 20 minutes.
  • Flip the potatoes and bake for another 20 minutes or until they’re fork tender and have crispy edges.
  • Take the potatoes out of the oven and top with the bacon and cheese.
  • Bake for 5 minutes or until the cheese is melted.
  • Add sour cream, pico de gallo, guacamole, and sliced jalapenos on top.
  • Garnish with cilantro and green onions and serve immediately.

Notes

Shred your own cheese: Store-bought shredded cheese doesn't melt as well as freshly shredded cheese because of the additives in there to stop the strands sticking to each other. Those additives also affect how well the cheese melts, so shred your own.
Uniform potato slices: I like to use a mandoline slicer for even potato slices, so they cook evenly.
Serve right away: You'll get the crispiest and tastiest results if you serve your Irish nachos immediately while they're nice and hot from the oven.
Get creative with the toppings: Anything goes, including any Tex-Mex toppings or even Irish inspired ones like corned beef and shredded cabbage.
