- 3 Tablespoons olive oil
- 8 to 10 Slices bacon, chopped and cooked
- 1 ½ Teaspoons salt
- 3 Pounds gold potatoes, scrubbed and sliced ¼-inch thick
- 1 ½ Cups colby jack cheese, shredded
- 1 jalapeno, sliced
- 1 Teaspoon black pepper
- ½ Teaspoon dried rosemary
- 1 Teaspoon garlic powder
- ½ Teaspoon dried thyme
- 1 Cup guacamole
- 1 Cup sour cream
- 1 Cup pico de gallo
Optional Garnishes:
- cilantro, chopped
- green onions, sliced
Instructions
- Preheat the oven to 450°F and grease a large rimmed baking sheet or cast iron skillet.
- Add the potatoes, oil, salt, pepper, rosemary, thyme, and garlic to a mixing bowl.
- Toss until the potato slices are all coated.
- Add the potatoes to your prepared baking sheet in a single layer and bake for 20 minutes.
- Flip the potatoes and bake for another 20 minutes or until they’re fork tender and have crispy edges.
- Take the potatoes out of the oven and top with the bacon and cheese.
- Bake for 5 minutes or until the cheese is melted.
- Add sour cream, pico de gallo, guacamole, and sliced jalapenos on top.
- Garnish with cilantro and green onions and serve immediately.
