How to Make Corned Beef Tacos

First of all you need to peel and boil some potatoes and then you can cook onion and cabbage. Mash the potatoes, stirring in the cheese. Now cook thousand island-coated tortillas in a skillet, dressing side up.

Add the corned beef, cabbage and onions on one side and then fold them in half. Once they’re fried to golden brown and smelling incredible, they’re done!

Corned Beef Tacos Variations

These corned beef tacos are wide open to being tweaked! Consider upgrading the sweet onion to Guinness-caramelized white ones or using sour cream instead of the Thousand Island dressing.

You might like to use ‘crema’ for a more balanced Mexican-Irish taco take. To make cream, combine equal parts of sour cream with mayonnaise then squeeze in some lime juice and, if liked, a little hot sauce. If you don’t have sour cream, plain yogurt would also work. Drizzle the finished tacos with crema.

Choose from flour or corn tortillas and pick your favourite cheese to go in there. I love Irish shredded cheddar. It’s similar to sharp cheddar. Swiss cheese or cotija cheese would be tasty alternatives, too. Some people make these with two tortillas instead of just one (with cheese in between them) since that makes the tacos sturdier. You might want to add some sliced jalapeños, too.

What to Serve with this St. Patrick’s Day Dinner

You can take your pick from various Irish inspired recipes that would go well with corned beef tacos. If you’re making a range of appetizers, these are of course a very worthy addition to any buffet spread.

You could omit the potato from the Irish tacos and instead serve mashed potatoes on the side or perhaps Colcannon. Beer bacon cheese bread is another option or you could make something like creamed spinach with garlic or cabbage gratin.

    1. Yes that is very true, but that’s still the typical St Patrick’s Day fare in the US for many people regardless of its correct history 🙂
