Lime Curd

Lime curd is a vibrant, tangy spread that brings tropical flair to your favorite baked goods and treats. It’s easy to make with just 5 simple ingredients. Spread it on toast, swirl it into yogurt or layer it into cakes for a citrusy punch.

Ingredients

  • 3 eggs whole
  • ½ Cup lime juice about 6 medium limes
  • ½ Cup sugar
  • 1 Tablespoon lime zest
  • 6 Tablespoons butter

Instructions

  • Wash and dry your jars.
  • Wash the limes to remove any pesticides and zest them until you have 1 tablespoon of zest.
  • Add the lime zest to the sugar and combine.
  • Juice the lime, until you have ½ cup of juice.
  • In a saucepan, whisk eggs then add the sugar, zest mixture and juice.
  • Place pan on the burner and cook over low heat, taking care to heat the mixture slowly. Whisk continuously to avoiding curdling the eggs, and cook until the mixture reaches 170°F or until it coats the back of a spoon, about 6 minutes.
  • Remove from heat and stir in butter until incorporated.
  • Fill prepared jars with the curd and loosely add the lids.
  • Allow to come to room temperature for about an hour.
  • Tighten lid rings and refrigerate.

Notes

Keep the heat low: Gentle cooking prevents the eggs from curdling.
Whisk constantly: This ensures even thickening and a smooth consistency.
Strain if needed: If lumps form, use a fine mesh strainer to achieve a perfectly smooth curd.
