Lucky Charms Rice Krispie Treats

Leprechaun bait, or Lucky Charms Rice Krispie treats, are just the ticket for St Patrick's Day dessert. These are very sweet and delicious!

  • 6 Cups Lucky Charms cereal
  • 8 Ounces mini marshmallows white
  • 8 Ounces marshmallows colored or special Lucky Charms marshmallows
  • 4 Tablespoons butter

Instructions

  • Line a baking pan with parchment paper and set aside.
  • In a large saucepan, melt butter and white mini marshmallows together over low/medium heat, stirring continuously.
  • Once marshmallow mixture is melted and smooth, add in your Lucky Charms cereal and stir well until cereal is fully coated and sticky.
  • Now add in your colored marshmallows. Give a quick stir so they are incorporated but not fully melted.
  • In your prepared pan, scoop the Lucky Charm mixture in and press down until the mixture is evenly dispersed.
  • Allow to set for an hour then cut into 12 equal pieces and serve.

Notes

Marshmallow mixture: If you can't find colored marshmallows, you can just use the white ones. You will want some in the bars that are melted and some still fluffy and not melted, so add some early and some later on.
Get an even layer: Once you've pressed the melted marshmallows mixture into the baking dish, press a greased piece of parchment paper or plastic wrap on top so you can get your homemade Lucky Charms treats nice and even.
