Ingredients

  • 1 Tablespoon olive oil
  • 1 Pound ground beef lean
  • ½ Teaspoon salt
  • ½ Teaspoon black pepper
  • 4 Cups butter lettuce leaves
  • 1 Pint cherry tomatoes halved
  • 1 Cup cheddar cheese shredded
  • ½ Cup red onion sliced
  • ½ Cup pickles sliced
  • ½ Cup bacon cooked and chopped
  • ¼ Cup pickled jalapeno slices, optional

Instructions

  • Heat the olive oil in a large skillet over a medium-high heat.
  • Add the beef and cook for 7 to 10 minutes, breaking it apart with a wooden spoon or spatula as it cooks.
  • Drain off the excess fat and season the beef with salt and pepper. Allow it to cool slightly.
  • Evenly divide the lettuce, cooked beef, tomatoes, cheese, red onions, pickles, bacon, and jalapeno slices between 4 meal-prep containers.
  • Pour burger sauce into individual lidded dressing containers and add one to each meal-prep container.
  • Serve the bacon cheeseburger bowls out of the meal-prep containers or serve in a bowl.

Notes

Cooking the ground beef: You need to fully cook the ground beef, not just brown it. Once it's all brown with no pink remaining, it's done. Mine took about 8 minutes. Use a wooden spoon or spatula to break it up as it cooks, to help it cook evenly.
Keep the lettuce crisp: Drain the excess fat from the beef and allow it to cool slightly to avoid soggy lettuce.
Storing the dressing: Store the burger sauce in individual containers or drizzle on top before serving. If you're making these as a portable dish to take somewhere, then it's best to use the little dressing containers. If you're eating them at home, it doesn't matter.
