Ingredients

  • 1 Tablespoon olive oil
  • 1 Pound chicken ground
  • 3 Cloves garlic minced
  • 1 Cup cherry tomatoes halved
  • ½ Cup kalamata olives pitted and halved
  • 1 red onion medium, sliced
  • 1 zucchini medium, sliced
  • 2 Teaspoons Italian seasoning dried
  • ½ Teaspoon salt
  • ½ Teaspoon black pepper freshly ground
  • ¾ Cup feta cheese crumbled

Instructions

  • Heat the olive oil in a large skillet over a medium-high heat.
  • Add the chicken and use a spatula to break it apart as it cooks for 6 or 7 minutes or until browned and almost cooked through.
  • Add the garlic and cook until fragrant, about 1 minute.
  • Add the tomatoes, olives, red onion, zucchini, Italian seasoning, salt, and pepper.
  • Toss to combine and cook for 5 or 6 minutes or until the tomatoes soften slightly.
  • Add the feta cheese just before serving.

Notes

Break up the chicken as it cooks: You can do this with a meat chopper or wooden spoon.
Adjust the seasonings: Adjust them to your liking and keep in mind that feta cheese and olives are naturally salty so don't add too much salt.
Add the feta cheese right at the end: This will keep its texture and stop it from melting.
