Miso Salmon Bites

Miso salmon bites offer the perfect mix of savory, sweet and tangy. The glaze caramelizes beautifully on the salmon for an irresistible bite.

Ingredients

For the Salmon Bites

To Serve

  • rice jasmine or basmati, cooked
  • 4 lime wedges
  • sesame seeds
  • fresh cilantro chopped
  • 2 green onions chopped

Instructions

Cure the Salmon (Optional)

  • Pat salmon filets dry with a paper towel and place on a rimmed baking sheet.
  • Combine equal parts salt and granulated sugar in a small bowl.
  • Sprinkle the curing mixture on both sides of the salmon.
  • Allow the fish to sit at room temperature for 15 minutes.
  • Add ice cubes to a large bowl filled with water.
  • Add cured salmon to bowl of ice water to rinse off.
  • Remove and pat dry with a paper towel.
  • Place salmon on a cutting board and cut it into 1-inch cubes.

Make the Marinade

  • Whisk miso paste, honey, rice wine vinegar, soy sauce, sesame oil, ginger powder, and garlic in a small bowl until combined.
  • Reserve 3 tablespoons of the marinade for serving; set aside.

Marinate the Salmon

  • Add salmon (cut into 1-inch cubes if not done already) and remaining marinade mixture to a medium bowl.
  • Toss evenly to coat.
  • Marinate for 15 minutes.

Cook the Miso Salmon Bites

  • Preheat the broiler for 5 to 10 minutes.
  • Transfer salmon to a rimmed baking sheet.
  • Broil on the middle oven rack on high for 6 to 8 minutes, rotating the pan halfway through.
  • If preferred, you can air fry the salmon bites at 400°F for about 8 minutes, flipping halfway through.

Assemble and Serve

  • Plate the salmon bites and drizzle the reserved marinade over them.
  • Garnish with chopped cilantro and green onions and add lime wedges.
  • Serve immediately.

Notes

Cut evenly: Keep salmon cubes the same size so they cook evenly.
Use white miso: It gives a milder flavor that won’t overpower the salmon.
Don’t overcook: Remove once opaque in the center for the best texture.
