Pizza Zucchini Boats

Zucchini pizza boats make a delicious meal if want a healthier alternative to pizza. It's easy to make these pizza boats and they'll be done in just half an hour.

  • Preheat the oven to 400°F.
  • Wash the zucchini and cut them in half lengthwise. Using a small spoon, scoop out the seeds and flesh of the zucchini to form a small trough inside each half.
  • Drizzle the olive oil on a large baking sheet. Lay the zucchini halves in a single layer on the baking sheet and sprinkle them with salt, pepper, and Italian seasoning.
  • Spoon pizza sauce into each zucchini boat, filling it to the top.
  • Top each zucchini boat with shredded mozzarella, pepperoni, and diced red onion (if desired). Add any other toppings you love!
  • Bake in the preheated oven for 15 to 20 minutes. The zucchini boats are done when the zucchini is tender and easy to cut through.
  • Sprinkle the zucchini boats with fresh Parmesan cheese and red pepper flakes.

Notes

Zucchini prep: I like to use a teaspoon measuring spoon to dig the middles out of the zucchini to make the hollows, although a melon baller would do the job too.
Excess zucchini: As for those parts of the zucchini you remove, don't throw them out. You can use them in zucchini loaves or muffins, or else chop and use in a stir fry or omelet.
Too much sauce? The smaller your zucchini the less pizza sauce you'll need. You can freeze the rest for up to 3 months. I sometimes freeze it in ice cube trays so I can just thaw what I need!
Can't find mini pepperoni? Just chop regular size pepperoni.
