  • Melt the chocolate chips in a microwave safe mixing bowl. Start by microwaving them for 45 seconds on full power.
  • Stir the chocolate and continue heating it for 45 seconds at a time until completely melted.
  • Add the marshmallows and almonds to the mixing bowl and fold to combine. Make sure the marshmallows and almonds are evenly distributed throughout the chocolate.
  • Line a 9 x 13-inch baking sheet with wax or parchment paper.
  • Use a cookie scoop or spoon to drop dollops of the chocolate mixture into the baking sheet. Your dollops should be about two tablespoons in size.
  • Let your rocky road bites chill in the fridge for an hour, or until the chocolate has set.

Notes

Fold in the add-ins: It's important to mix the marshmallows and almond slices in well, so they're equally distributed through the chocolate.
Mini marshmallows: If your grocery store sells the tiny mini marshmallow bits you have in hot chocolate, you can sprinkle some on top of your rocky road bites before the chocolate sets, as a garnish.
Chilling time: These will take about an hour to set fully in the refrigerator, so plan ahead.
