Substitutions and Variations

Semi sweet chocolate chips: You can use white chocolate chips, milk chocolate chips, dark chocolate chips, or a mixture of dark and milk chocolate if you like.
Mini marshmallows: If you can’t find these, you can use large ones chopped into smaller pieces.
Almond slices: If you don’t like almonds or want to switch things up, you can use chopped walnuts, chopped pecans or chopped peanuts instead.
More add-ins: Add crunchy peanut butter chips (chocolate and peanut butter pair so well!) or consider including butterscotch chips, raisins, dried fruit like cranberries, broken up pretzels, graham crackers or banana chips in the chocolate mixture. Nutty topping: Sometimes I like to add finely crushed nuts on top as a garnish, so have fun and get creative!

Store: These bites can be enjoyed straight from the fridge or the freezer. If you want them to soften a little, let them sit on the counter for 20 to 30 minutes before serving. The bites should stay fresh for up to 2 weeks.
Freeze: You can freeze these in an airtight container for up to 3 months.
Thaw:
Defrost them in the refrigerator overnight or serve them frozen.

Top Tips

Fold in the add-ins: It’s important to mix the marshmallows and almond slices in well, so they’re equally distributed through the chocolate.
Mini marshmallows: If your grocery store sells the tiny mini marshmallow bits you have in hot chocolate, you can sprinkle some on top of your rocky road bites before the chocolate sets, as a garnish.
Chilling time: These will take about an hour to set fully in the refrigerator, so plan ahead.

Rocky Road Clusters FAQs

Can I make these larger or smaller?

Sure. I used a 2-tablespoon cookie scoop because I find that size is just right for these, but you can make them however large or small you want.

Are these best served chilled or at room temperature?

They’re good either way actually, and you can even serve them frozen for a refreshing hot weather snack. If it is a hot day, these will melt and become sticky at room temperature, so if they’re going to be out for any amount of time then it’s best to refrigerate or freeze them to keep them fresh.
