Marshmallow fluff: For the nougat layer. The recipe calls for 7 ounces so just get a 7-ounce jar.
Powdered sugar: For sweetness.
Chocolate chips: Some for the filling and the rest for coating the candy bites.
Chewy caramels: I used Werthers Originals in this recipe (you can find them here!)

How to Make Homemade Milky Way Bites

Melt the chocolate: Melt some of the chocolate chips in a microwave.
Add the marshmallow fluff: Mix the powdered sugar, marshmallow fluff into the melted chocolate chips until smooth.
Make the candies: Drop spoonfuls of the marshmallow mixture on to wax paper lined baking sheets.
Let them set: Freeze for 2 hours or until set.
Add the caramel layer: Shape your caramels into disk-shapes (the same size as your marshmallows) and press on top. Chill for 30 minutes more.
Coat them in chocolate: Melt the remaining chocolate and dip the marshmallow caramel disks in there to coat, letting excess chocolate drip off. Chill your Milky Way bites for an hour or until set.

Substitutions and Variations

Chocolate chips: Feel free to switch out the semi-sweet chocolate chips for your favorite kind of chocolate, perhaps dark chocolate. You might need a little more freezing time if you’re using milk chocolate chips. Combine chocolate and coconut oil if you want to make tempered chocolate (it’s a bit smoother that way but I just used the melted chocolate chips without any oil and mine came out really good).
Another flavor: A few drops of vanilla extract would be good in these or you could add a little flaky sea salt on top before they set. That isn’t a Milky Way flavor but there’s something so good about the combination of caramel and salt!

How to Store Milky Way Bites

Store: Keep the bites in an airtight container in the refrigerator and eat within 2 weeks.
Freeze: You can freeze these in an airtight container for up to 3 months.
Thaw:
 Defrost them in the refrigerator overnight.

Top Tips

Chewy caramels: Make sure you grab the chewy caramels. You want to be able to bend and shape the caramels to match the shape of the nougat mixture.
Use wax paper: I recommend using wax paper, not parchment paper. It doesn’t matter so much once your bites are dipped in chocolate, but the marshmallow fluff is much more likely to stick to parchment paper than wax paper.
Use 2 baking sheets: The marshmallow fluff mixture will spread out a bit before setting, so it’s best to use a pair of baking sheets to give them room to do so.

Can I make them a different size?

Sure! You can easily modify the size of your Milky Way Bites. The bites this recipe makes are about 1½ times the size of a fun-size Milky Way bar. If you make them smaller then you can still use 1 caramel per candy bite. If you make them bigger then you can use 1 or 1½ caramels per bite.

Why has the chocolate coating changed color?

Your chocolate might start to change color after a week or so in the refrigerator. Don’t worry if that happens. It’s just oxidization, similar to what happens after you slice an apple. You can minimize this by keeping your Milky Way bites in an airtight container.

Milky Way Bites

Treat yourself to these decadent homemade Milky Way bites with caramel, nougat and chocolate. They’re perfect for satisfying your sweet tooth.

Chilling Time: 2 hours
Total Time: 2 hours 10 minutes

Ingredients 

Instructions 

  • Melt ⅓ cup of chocolate chips in the microwave for 30 seconds at a time, stirring after each interval, until completely melted.
  • Combine the powdered sugar, melted chocolate and marshmallow fluff in a large mixing bowl. Fold the ingredients together until smooth.
  • Drop spoonfuls of the marshmallow mixture onto a pair of 9×13 inch baking sheets lined with wax paper. Chill the pans in the freezer for about 2 hours, or until the marshmallow mixture is firm to the touch.
  • Use your hands to shape the caramels into discs about the same shape as your marshmallow discs. Gently press the caramels onto the marshmallow and chill for another 30 minutes.
  • Melt the remaining chocolate just like you did before and then dip each disk in the melted chocolate. Allow the excess chocolate to drip off and return them to the baking sheets.
  • Chill your Milky Way bites in the fridge for about an hour, or until the chocolate is set.
