Ingredients

For the Potatoes:

  • 1 ½ Pounds potatoes baby yellow, sliced in half
  • 2 Tablespoons olive oil
  • ½ Teaspoon kosher salt
  • ½ Teaspoon black pepper freshly cracked
  • 1 Clove garlic minced
  • 1 Tablespoon fresh rosemary chopped

For the Ham:

For the Green Beans:

Instructions

  • Preheat oven to 400 degrees F. Grease a large-rimmed sheet pan with nonstick cooking spray.
  • In a medium bowl, add the potatoes, olive oil, salt, pepper, minced garlic, and rosemary. Toss to coat everything together.
  • Place the potatoes cut side down on the sheet pan. Bake in preheated oven for 20 minutes.
  • In a small bowl, whisk together the honey, wholegrain mustard, apple cider vinegar, rosemary, and garlic powder.
  • Remove the sheet pan from the oven and move the potatoes to one side of the pan. Place the ham steaks slightly overlapping on one side of the baking sheet. Brush evenly with the honey mustard sauce.
  • Place green beans on the sheet pan. Add olive oil, salt and pepper. Gently toss to combine.
  • Place into oven and bake for 20 to 25 minutes.
  • Garnish with chopped fresh parsley if desired.

Notes

Uniform sized potatoes: Cut the potatoes into more or less even-sized pieces so they all cook at the same rate.
Use more than one baking sheet: Unless you have a huge baking sheet, you'll be better off using two or three.
Check for doneness: When you can pierce the potatoes easily with a fork, everything should be done.
