Slow Cooker Chicken and Stuffing

  • Add the chicken thighs to your crockpot.
  • In a large bowl, combine the soup, broth and sour cream.
  • Stir to mix and then pour over the chicken thighs.
  • In another bowl, combine the stuffing mix, onion, celery, and melted butter.
  • Stir until evenly coated with butter and then spread evenly on top of the chicken mixture.
  • Put the lid on the slow cooker and cook on high for 3 to 4 hours or low for 6 to 8 hours.
  • Serve garnished with chopped fresh parsley, with your favorite side dishes.

Notes

Use a large enough crockpot: You'll need a large slow cooker (7 quarts) to make this recipe.
Check for doneness: The dish is ready to serve when the chicken pulls apart very easily.
Cool completely before storing: If you refrigerate leftover chicken while still warm, you'll get condensation in the container which will drip into the chicken mixture and make it watery.
