Why You’ll Love It
Such a simple recipe: This recipe doesn’t involve much more than putting the ingredients in your slow cooker and flipping the switch!
Moist, tender chicken: The slow cooking process keeps your chicken moist and tender, as it’s cooked gently in liquid to coax out all the wonderful flavors and keep it moist in texture. You can even use chicken breasts, which are leaner than thighs and more liable to dry out, and they should also come out juicy and succulent.
A crowd-pleasing dish: Who doesn’t love chicken and stuffing in a creamy sauce? This is the kind of dish everyone at the table is going to rave about and want again.
Crockpot Chicken and Stuffing Ingredients
A complete list of ingredients and amounts can be found in the recipe card below.
Chicken thighs: I like to use boneless skinless chicken thighs for extra-tender meat but you can use chicken breasts if you prefer.
Dry stuffing mix: The easiest way of getting that fantastic stuffing flavor that’s perfect with chicken (I used this one!)
Vegetables: Onion and celery add nutrients and flavor. Add some fresh or frozen green beans, carrots or other veggies if you like.
Sour cream: To give the sauce creaminess and tang.
Chicken broth: For the sauce. Any brand of chicken broth is good.
Condensed chicken soup: For flavor and to make the sauce taste great.
Fresh parsley: An optional garnish for your slow cooker chicken and stuffing recipe.

Substitutions and Variations
Gluten-free option: If you want gluten-free chicken and stuffing, use gluten-free soup, broth and stuffing mix.
Chicken soup: You can use the regular condensed cream of chicken soup, condensed cream of celery soup, or even condensed cream of mushroom soup for a different flavor.
Add more veggies: Green beans and carrots would be good in this or you could add frozen vegetables like peas and carrots instead.
Serving Suggestions
Appetizers: Begin your meal with mozzarella sticks and marinara sauce for dipping.
Side dishes: Serve up your slow cooker chicken and stuffing with garlic butter fondant potatoes and roasted acorn squash.
Desserts: Finish deliciously with tiramisu cheesecake or apple pie cookies with vanilla maple glaze.
How to Store Slow Cooked Chicken and Stuffing
Store: Keep leftovers in an airtight container in the refrigerator and eat within 3 days.
Freeze: You can freeze it in an airtight container for up to 3 months.
Thaw: Defrost the chicken and stuffing in the refrigerator overnight.
Reheat: Warm it back up in the microwave or in a pan on the stove.
Top Tips
Use a large enough crockpot: You’ll need a large slow cooker (7 quarts) to make this recipe.
Check for doneness: The dish is ready to serve when the chicken pulls apart very easily.
Cool completely before storing: If you refrigerate leftover chicken while still warm, you’ll get condensation in the container which will drip into the chicken mixture and make it watery.
Crockpot Chicken and Stuffing FAQs
Add a second can of condensed cream of chicken soup for a more creamy sauce.
I recommend thawing them out first, so they are sure to cook safely and evenly all the way through.
Sure, either way is good.
