Ingredients 

  • Pounds chicken thighs, boneless and skinless
  • ¼ Cup (½ Stick) butter, melted
  • 1 Box stuffing mix, I used Stove Top’s savory herbs stuffing, 6 Ounce box
  • 1 onion, small, diced
  • 1 Can condensed cream of chicken with herbs soup, 10½ Ounce can
  • Cups chicken broth
  • 8 Ounces sour cream
  • 2 Stalks celery, diced
  • fresh parsley, for garnish (optional)

Instructions 

  • Add the chicken thighs to your crockpot.
  • In a large bowl, combine the soup, broth and sour cream.
  • Stir to mix and then pour over the chicken thighs.
  • In another bowl, combine the stuffing mix, onion, celery, and melted butter.
  • Stir until evenly coated with butter and then spread evenly on top of the chicken mixture.
  • Put the lid on the slow cooker and cook on high for 3 to 4 hours or low for 6 to 8 hours.
  • Serve garnished with chopped fresh parsley, with your favorite side dishes.
