- 2 Tablespoons butter
- 1½ Pounds boneless skinless chicken breast, cut into 1-inch pieces
- 1 Teaspoon salt
- 1 Teaspoon black pepper, freshly cracked
- 2½ Cups chicken broth
- ½ Cup dry white wine, optional
- 1 Tablespoon Worcestershire sauce
- 1 Teaspoon apple cider vinegar
- 2 Teaspoons Italian seasoning
- 4 Cloves garlic, finely minced
- 1 yellow onion, cut into chunks
- 3 Stalks celery, sliced
- 3 carrots, large, peeled and cut into ½-inch pieces
- 1 Pound Yukon Gold potatoes, diced into ½-inch cubes, about 6 potatoes
- 2 bay leaves, fresh or dried
- ¾ Cup heavy whipping cream
- 3 Tablespoons all purpose flour
- ½ cup peas, frozen
- parsley, fresh chopped, for optional garnish
Instructions
- Melt the butter in a large skillet over a medium-high heat.
- Add the chicken and season with ½ teaspoon salt and ½ teaspoon pepper.
- Cook the chicken until browned, 5 or 6 minutes, and then transfer it into a 6 or 7-quart slow cooker.
- Add the broth, wine (if using), Worcestershire sauce, vinegar, Italian seasoning, garlic, onions, celery, carrots, potatoes, ½ teaspoon salt, and ½ teaspoon black pepper to the slow cooker and stir together until combined.
- Add the bay leaves on top, cover and cook on low for 7 to 8 hours or on high for 4 to 5 hours.
- In a medium bowl, whisk together the heavy cream and flour until smooth without any lumps remaining.
- Add the cream mixture and peas to the slow cooker and stir to combine.
- Cover and cook on high for 15 to 20 minutes, or until the chicken stew is thick and creamy.
- Discard the bay leaves before serving and season with more salt and pepper if needed.
- Ladle the stew into serving bowls and garnish with fresh chopped parsley if desired.
