Slow Cooker Italian Beef

Boneless chuck roast is flavored with herbs and spices in this slow cooker Italian beef recipe. It slow cooks until super-tender and makes the best Italian beef sandwiches.

Ingredients

For serving

  • 18 Slices provolone cheese
  • 9 buns hoagie buns or similar
  • 1 Cup pepperoncini

Instructions

  • Salt the chuck roast on all sides generously and allow to come to room temp and the salt to dissolved.
  • Heat a large Dutch oven over high heat. Brush with grapeseed oil and sear the meat on both sides for 5 minutes.
  • Remove and add to the slow cooker. Pour ½ of the broth into the Dutch oven and deglaze. Pour into the slow cooker.
  • Add all remaining ingredients and cover. Cook on low for 9 hours.
  • Shred the beef and cook 1 more hour.
  • Preheat the oven to 400°F.
  • Arrange the hoagie buns on a baking sheet. Add provolone slices on top and broil until the cheese is melted. Top with Italian beef and pepperoncini. Serve immediately.

Notes

Use plenty of salt: Make sure you add plenty of salt to the chuck roast and let it come to room temperature so the salt can dissolve into the meat.
Sear until golden brown: Sear the chuck roast all over. This makes it more flavorful and helps seal those tasty juices in there.
Toast the hoagie buns: This prevents them from going soggy when you add the Italian beef on top.
