Starbucks Copycat Egg Bites

Make Starbucks-style egg bites at home! This easy copycat recipe is protein-packed, oven-baked, and budget-friendly—just as tasty without the price tag!

Ingredients

  • 6 egg whites
  • ¼ Cup cottage cheese
  • 1 Clove garlic minced
  • ½ Teaspoon salt
  • ½ Teaspoon garlic powder
  • ¼ Cup roasted red bell peppers diced, from jar
  • 4 Ounces Monterey Jack cheese shredded
  • 1 Cup spinach
  • green onions diced, as garnish

Instructions

  • Preheat the oven to 350 degrees F.
  • Add egg whites, cottage cheese, minced garlic, salt, garlic powder, and ¾ the shredded cheese to a blender and blend.
  • Set aside 2 Tablespoons of red peppers.
  • Next, add the roasted red peppers and ½ the spinach and pulse 3 to 4 times to gently break them up.
  • Lightly spray an egg mold with nonstick oil
  • Add a pinch of spinach, red peppers, and cheese to the bottom of each mold. Fill each mold with eggs ¾ full.
  • Add 2 inches of warm water to a baking dish. Put the egg mold into the dish. Cover with foil.
  • Add to the oven on the center rack. Bake eggs for 1 hour.
  • Garnish with green onions.

Notes

Uniform chopping: Cut your veggies into more or less evenly sized pieces for even cooking.
Don't forget to grease the egg mold: This prevents your egg bites from sticking.
Don't skip the water bath: This ensures your egg bites cook evenly and stay tender and moist.
