Strawberry Mojito

Ingredients

  • 4 strawberries fresh, sliced
  • 8 mint leaves fresh
  • ½ lime cut into 4 wedges
  • ½ Tablespoon granulated sugar
  • 1 Cup ice
  • 1 ½ Ounces rum white
  • 1 Can club soda

Instructions

  • Place mint leaves and strawberries into a sturdy glass. Use a muddler to crush the mint and strawberries to release the mint oils and strawberry juices.
  • Add juice from 1 or 2 limes wedges and the sugar, and muddle again to release the lime juice. Don't strain the mixture.
  • Add ice, filling the glass almost to the top. Pour the rum over the ice, and then top off with club soda.
  • Stir, taste and add more sugar if desired. Garnish with the remaining lime wedge.

Notes

Use ripe strawberries: They’ll give you the best natural sweetness.
Do not over-muddle the mint: This can cause bitterness.
Chill your glass: Helps keep the drink cool without too much ice dilution.
