Strawberry Pineapple Popsicles

These strawberry pineapple popsicles are bursting with real fruit flavor and refreshing citrus. Layered with pineapple and strawberry purées, they look as good as they taste. Add mint and lime for an extra zing.

Ingredients

  • 2 Cups pineapple fresh, diced
  • 2 Cups strawberries fresh, diced
  • ¼ Cup mint leaves
  • 1 lime juiced
  • 1 Tablespoon lime zest
  • 2 Tablespoons granulated sugar

Instructions

  • Cut the pineapple in half and peel. Dice the meat.
  • Wash thoroughly the strawberries, remove the leaves from the top, and dice.
  • Wash the lime and grate the zest. Cut the lime in half and juice it.
  • Wash the mint leaves (stems discarded) and chop them roughly
  • In a food processor, process the pineapple and the spearmint until smooth. You can add a splash of water now to help the food processor work. Put the mixture in a bowl and set aside.
  • Process the strawberries, lime zest and juice until smooth.
  • Try the 2 different fruit purées and, in case of needed, add a bit of sugar and mix until dissolved.
  • In the popsicle moulds, pour some pineapple purée in each mould to create the first layer. Then pour the strawberry purée until you top it up.
  • Freeze for 6 hours or until set before serving.

Notes

Strain the fruit mixes: Strain through a fine mesh colander before pouring them into the molds to get rid of the strawberry seeds and any unwanted fiber from the pineapple.
Taste before freezing: Adjust sweetness if your fruit is very tart.
Layer carefully: Use a spoon to help avoid mixing the layers.
Use silicone molds: They make it easier to remove the popsicles.
Add chunks of fruit: A few pieces of diced fruit add fun texture.
Freeze fully: Give them enough time to set completely before serving.
