Ingredients

  • 1 Pound ground beef or sausage, cooked and drained
  • 2 Cans refried beans
  • 8 Ounces cream cheese softened
  • 1 Cup sour cream
  • 1 Envelope taco seasoning
  • 1 Can green chilies diced
  • 1 Cup Cheddar cheese shredded
  • 1 Cup Monterey Jack cheese shredded

Optional Toppings

  • jalapenos sliced
  • black olives sliced
  • fresh cilantro

Instructions

  • Preheat oven to 350°F.
  • In a large mixing bowl, stir together refried beans, cream cheese, sour cream, taco seasoning, and diced green chilies until smooth.
  • Stir in the cooked meat and about ¾ of each cheese.
  • Spread mixture into a baking dish and sprinkle remaining cheese on top.
  • Bake for 20 to 25 minutes or until hot, bubbly and melted.
  • Cool for 5 to 10 minutes.
  • Top with jalapeños, olives and/or cilantro, then serve warm with tortilla chips.

Notes

Soften the cream cheese: Let it warm slightly so it blends smoothly into the beans.
Drain the meat well: Removing extra grease keeps the dip from turning oily.
Use sturdy tortilla chips: Choose thicker chips so they hold up when you scoop the creamy bean dip.
Taste the base: Check seasoning before baking and add extra taco seasoning if you want more punch.
Cook until the center is warm: Bake the Texas trash dip until the edges are bubbling and the center looks hot and slightly puffed rather than just melted on top.
Keep it warm for parties: You can keep the dip warm for a few hours in a Crockpot. Just check it often and don't forget to top up the bowl of chips, as everyone will want to keep eating this dip!
