This cheesy Texas trash dip is the kind of warm bean and cheese dip that vanishes fast whenever you set it out. Refried beans, cream cheese and sour cream turn the base extra creamy while taco seasoning, green chiles and plenty of melted cheese give it bold Tex Mex flavor. Baked until hot and bubbly, it comes out loaded with beef, spice and ooey gooey cheese. Add jalapeños, olives and cilantro on top and you have a vibrant dip that’s party ready in minutes.

Ground beef or sausage: Adds hearty flavor and makes the dip feel more like a meal.

Mix the base: Stir together refried beans, cream cheese, sour cream, taco seasoning and green chilies until the mixture looks smooth.
Add the meat: Fold in the cooked drained beef or sausage along with part of the shredded cheese.
Fill the dish: Spread the bean and meat mixture into a baking dish in an even layer.
Top with cheese: Sprinkle the remaining cheese over the surface so it covers the dip.
Bake until bubbly: Slide the dish into the oven and bake until the dip is hot and the cheese has melted.
Rest briefly: Let the pan sit for a few minutes so the dip thickens slightly.
The finishing touches: Add jalapeños, black olives and cilantro across the top and serve warm with tortilla chips.

Substitutions and Variations

Meat choices: Use ground beef, pork sausage or leave the meat out for a vegetarian version.
Cheese swap: Try a Mexican blend cheese, pepper jack cheese or all sharp cheddar cheese if that’s what you have.
Bean variation: Use vegetarian refried beans if you want to skip added fat from lard.
Homemade ingredients: Feel free to use homemade traditional refried beans and/or homemade taco seasoning mix to control the salt and heat.
Change the spiciness: Use two cans of chopped green chilies for extra spice or add some chopped fresh serrano peppers. If you want a milder dip, you can omit the chilies altogether.
Gluten-free variation: Choose certified gluten-free refried beans, taco seasoning and tortilla chips so the whole pan stays gluten-free.
Dairy-free variation: Use dairy-free cream cheese, dairy-free sour cream and dairy-free shredded cheese while keeping the beans and meat the same.
Slow cooker version: Transfer the mixed dip to a slow cooker, cover and heat until hot, then sprinkle cheese on top and let it melt before serving.
Tasty toppings: Add sliced green onions or diced tomatoes on top along with the olives, cilantro and jalapenos, or mix and match some of these to customize the warm bean dip.

Serving Suggestions

With other dips: Why not make a dip trio? My dirty martini dip and pink beetroot hummus would contrast nicely.
With more appetizers: Add some Cajun shrimp deviled eggs and pizza bagel bites to the buffet table.
Tortilla chip alternatives: Chopped raw veggies like bell peppers and carrots also work for dipping, or you could try crusty bread or pretzels.

Top Tips

Soften the cream cheese: Let it warm slightly so it blends smoothly into the beans.
Drain the meat well: Removing extra grease keeps the dip from turning oily.
Use sturdy tortilla chips: Choose thicker chips so they hold up when you scoop the creamy bean dip.
Taste the base: Check seasoning before baking and add extra taco seasoning if you want more punch.
Cook until the center is warm: Bake the Texas trash dip until the edges are bubbling and the center looks hot and slightly puffed rather than just melted on top.
Keep it warm for parties: You can keep the dip warm for a few hours in a Crockpot. Just check it often and don’t forget to top up the bowl of chips, as everyone will want to keep eating this dip!

Spicy Warm Bean Dip FAQs

Why did my Texas trash dip come out greasy on top?

Extra fat from the meat or cheese is usually the cause. Drain the cooked meat well before mixing and make sure you’re not adding any extra oil or grease from the skillet.

Can I make this dish ahead?

Yes, assemble and refrigerate up to 24 hours before baking.

Why did the dip turn out thicker than I expected?

Refried beans firm up as they bake and cool. If you want a looser texture next time, mix the base until very smooth and spread it evenly so the layer is not too deep. Another idea is to mix in a splash of milk before baking.

What can I do with leftovers?

Spoon leftover Texas trash dip into warm tortillas for fast tacos, burritos or quesadillas, or pile it over nachos with extra cheese and jalapeños. It’s also good stuffed into baked potatoes with a cilantro garnish, or used as the base layer for walking tacos with crushed chips on top.
