Ingredients 

  • Pounds ground beef
  • ¾ Cup onion, chopped
  • 2/3 Cup breadcrumbs, seasoned dry
  • ½ Cup BBQ sauce
  • 1 egg, beaten
  • 2 Teaspoons chili powder
  • 2 Teaspoons salt
  • ½ Teaspoon black pepper
  • 2 Pounds potatoes, peeled and cut into small chunks
  • 1 Can evaporated milk
  • ½ Cup butter
  • 1 Teaspoon garlic powder
  • ½ Teaspoon black pepper
  • ½ Cup canned fried onions, French’s
  • 1 Cup Mexican blend cheese, shredded
  • 6 Slices bacon, cooked and crumbled

Instructions 

  • Heat the oven to 350 degrees F.
  • In a large bowl, combine the beef, onion, breadcrumbs, BBQ sauce, egg, chili powder, pepper and half the salt.
  • Press the meatloaf evenly into a 9 x 13-inch pan and bake the meatloaf for 30 minutes.
  • Place the potatoes in a pan and cover with water. Boil for 20 minutes until soft. Drain, then add the milk, butter, garlic powder, remaining salt and pepper, and mash the potatoes well.
  • Remove the meatloaf from the oven and spread the potatoes evenly over the meat.
  • Sprinkle the top with the fried onions, then add the cheese and top with the bacon.
  • Place the casserole back into the oven and bake until the cheese is melted and bubbly, about 10 minutes. Serve hot.

    1. Hi Calli, yes you can freeze it if cooked first. Cooked leftovers can be frozen in freezer Ziploc bags or airtight containers for up to 3 months (then thaw overnight in the fridge and reheat in the microwave or oven). I like to freeze casseroles like this in individual portions for future meals.
