Ingredients
For the Bars
- ½ Cup unsalted butter, melted
- 1 egg
- 1 Cup brown sugar
- 1 ½ Teaspoon vanilla extract
- 1 Cup all purpose flour
- ½ Cup dried cranberries
- ½ Teaspoon orange zest
For the Topping
- 1 Cup plus ⅛ Cup white chocolate chips
- 4 Ounces cream cheese, at room temperature
- ¾ Teaspoon vanilla extract
- 2 Cups icing sugar
- ¼ Cup dried cranberries
Instructions
Prepare the Bars
- Preheat oven to 350°F. Spray an 8-inch square pan with cooking spray.
- Melt the butter in the microwave for about 90 seconds. Let the butter cool for a minute and then add the egg, brown sugar and vanilla and stir to combine.
- Add the flour and stir until just combined.
- Fold in ½ cup cranberries and orange zest and stir to combine.
Bake the Bars
- Scoop the batter into the pan, smoothing if necessary.
- Bake for 18 to 21 minutes. Allow bars to cool before frosting them.
Prepare the Topping
- Melt 1 cup of the white chocolate in the microwave for about 1 minute, reheating in 10 second intervals, or until it can be stirred smooth.
- In a stand mixer with the paddle attachment, combine cream cheese, about two-thirds of the melted white chocolate, 2 cups of icing sugar and the vanilla and beat until smooth and fluffy. Add additional icing sugar if necessary.
Decorate the Bars
- Frost the bars and then evenly sprinkle cranberries and un-melted white chocolate chips over the top of the frosted bars.
- Drizzle bars with remaining melted white chocolate, reheating in the microwave if necessary.
